Toasted Mediterranean Pumpkin Bread Sandwich

There’s no need to get on a plane to get a taste of the Mediterranean. This mouth-watering creation is not only easy to make but also looks great on the plate.


Serves 1


2 slices Abbott’s Village Bakery® Pumpkin & Sunflower Seeds bread

2 tbsp pesto

2 slices mozzarella cheese

¼ cup very thinly sliced red onion

30g sliced black olives

40g roasted capsicum

1 small handful baby spinach


  1. Place a sheet of wax paper on the counter, lay out slices of bread
  2. Spread the pesto on to one slice
  3. Place mozzarella on top of the pesto
  4. Layer the red onions, black olives, roasted red peppers, and spinach onto the other slice of bread
  5. Combine both halves of sandwiches together
  6. Toast sandwich in a sandwich press
  7. Cut in half and enjoy!
