Toasted Mediterranean Pumpkin Bread Sandwich
There’s no need to get on a plane to get a taste of the Mediterranean. This mouth-watering creation is not only easy to make but also looks great on the plate.
2 slices Abbott’s Village Bakery® Pumpkin & Sunflower Seeds bread
2 tbsp pesto
2 slices mozzarella cheese
¼ cup very thinly sliced red onion
30g sliced black olives
40g roasted capsicum
1 small handful baby spinach
- Place a sheet of wax paper on the counter, lay out slices of bread
- Spread the pesto on to one slice
- Place mozzarella on top of the pesto
- Layer the red onions, black olives, roasted red peppers, and spinach onto the other slice of bread
- Combine both halves of sandwiches together
- Toast sandwich in a sandwich press
- Cut in half and enjoy!
