Poached Egg, Avocado, Feta and Tomato Bruschetta

You can’t beat waking up to the smell of fresh toast. Try out this breakfast treat to start your day off the right way.

1 slice Abbott’s Village Bakery® Sundried Tomato & Basil bread

1/4 avocado

1 large egg, poached

1 tbsp white wine vinegar

30g crumbled feta

handful of basil leaves

50g cherry tomatoes


  1. Fill a large saucepan with water, add the vinegar and bring to a boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack egg into water and cook for 2 ½ minutes
  2. Toast the bread
  3. Dice avocado and tomato
  4. Then place a poached egg on top of the bread slice
  5. Scatter with basil leaves and feta
  6. Enjoy!
